  • Blend. Add the almonds to a high-speed blender. Start the blender on its lowest setting and then gradually increase the speed to the highest. Blend on high until the almonds have broken down into a fine, powdery meal, for 5-10 seconds. If you see any clumps then stir the almonds, and blend again. Don't blend the almonds for too long; they will start clumping up on the sides and turning into almond butter. 
  • Store. Leftover almond meal keeps well in an airtight container in the refrigerator for up to 3 months. For longer-term storage, freeze for up to 6 months.
