Zucchini Smoothie
Get your vegetables in with this delicious, creamy zucchini smoothie. Almost all creamy smoothies out there contain a banana, right? Well, not this one! This green zucchini smoothie is slightly sweet and creamy without any bananas.

- 1 small zucchini , cubed and frozen*
- 1 avocado
- 1 pear
- 1 handful spinach
- 1 tsp. lemon juice
- 1 cup coconut milk **
Blend. Add the zucchini, avocado, pear, spinach, lemon juice, and coconut milk into a high-speed blender and blend on high until completely smooth.
Serve immediately.
Store. Leftover smoothie keeps well in an airtight container in the refrigerator for up to 1 day, though best when fresh. For longer term storage, freeze in an airtight container for up to 1 month.
*Cut the zucchini into 1-inch/2.5-cm thick slices. Arrange the slices in a single layer onto a parchment paper-lined baking sheet and freeze until firm, 3-4 hours.
**I used carton coconut milk.
