Equipment

Ingredients

  • 1 small zucchini , cubed and frozen*
  • 1 avocado
  • 1 pear
  • 1 handful spinach
  • 1 tsp. lemon juice
  • 1 cup coconut milk **

Instructions

  • Blend. Add the zucchini, avocado, pear, spinach, lemon juice, and coconut milk into a high-speed blender and blend on high until completely smooth.
  • Serve immediately.
  • Store. Leftover smoothie keeps well in an airtight container in the refrigerator for up to 1 day, though best when fresh. For longer term storage, freeze in an airtight container for up to 1 month.

Notes

*Cut the zucchini into 1-inch/2.5-cm thick slices. Arrange the slices in a single layer onto a parchment paper-lined baking sheet and freeze until firm, 3-4 hours.
**I used carton coconut milk.
***Prep time doesn't include freezing the zucchini (3-4 hours).
